Menu Monday: Spring Grocery List

Spring has sprung, and rain is watering Mother Earth so that she can begin to provide a bountiful harvest full of fresh fruits and veggies. This is exciting news, especially for those of you wanting to increase your vegetable and fruit intake or simply mix it up a bit! Below is a list of in-season fruits and veggies for you to keep an eye on as you shop your produce section at the grocery store.

 

 

Fast track meal plan for a day in spring!

Breakfast: 1 cup oatmeal, 1 cup mixed berries

Snack: 2% plain greek yogurt

Lunch: mango avocado salsa salad (see recipe below)

Snack: 2 tbsp of hummus and 10 carrot sticks

Dinner: quinoa salad with tomatoes, spinach, onions, fresh parsley and light vinaigrette
